Black Eyed Pea Salad

What You Need:
- 1 cup cooked black eyed peas
- 3 cups water
- 1 Tbsp whole grain mustard
- juice of 1 lime
- 1 Tbsp apple cider vinegar
- ½ tsp sea salt
- ¼ cup olive oil
- ¼ cup sun dried tomatoes
- ½ bunch parsley
What You Do:
1. Whisk the mustard, lime juice, vinegar, olive oil and salt in a bowl to make the dressing.
2. In a large bowl mix together the beans, sun dried tomatoes and parsley.
3. Pour your dressing over the bean mixture and stir well.
