Chimichurri Quinoa

What You Need:
- 1 cup quinoa
- 2 cups water
- 3 Tbsp vinegar (red wine or apple cider)
- 2 Tbsp water
- 2 cloves garlic
- ½ tsp chili flakes
- ¼ cup extra virgin olive oil
- 1 cup cooked adzuki beans
- 1 small bunch flat leaf parsley
- pinch salt and pepper
What You Do:
1. Rinse quinoa.
2. Bring 2 cups of water to a boil with a bit of salt. Then add the quinoa.
3. Cover and lower to a simmer. Cook for 15 minutes.
4. Turn off the fire, and let steam in covered pot for 10 minutes.
5. Make chimichurri sauce: combine vinegar, salt, pepper, chili flakes, 2 Tbsp water, garlic and oil. Pulse in blender until well combined.
6. In large bowl, mix quinoa, beans and sauce. Garnish with fresh parsley.
