Gluten Free Banana Pancakes
Makes 4 medium pancakes.

1. In a large bowl, combine wet ingredients (banana, oil, lemon, eggs, vanilla).
2. In another bowl, mix together the rest of your ingredients.
3. Pour the dry mixture over the wet mixture and stir in until it is just combined.
4. Let the mix sit for about 10 minutes.
5. Heat, a pan over medium heat with a tiny bit of coconut oil.
6. Pour 1/4 cup of your batter onto the pan and cook for about 3-4 minutes until you see several bubbles.
7. Flip it and cook the other side for approximately 1-2 minutes.
8. Repeat for the remainder of your batter.
Serve with real maple syrup and enjoy!
