Kohlrabi Avocado Salad
What You Need:
- 2 medium kohlrabi, peeled
- 4 radishes
- 1 carrot
- 1 apple
- 2 Tbsp fresh lime juice
- 2 Tbsp fresh orange juice
- 2 Tbsp walnut oil
- 2 Tbsp olive oil
- 2 ripe avocados
- handful chopped walnuts for garnish
- salt and pepper to taste
*If you have a mandoline, this will be way easier to prepare.
What You Do:
1. Thinly slice the kohlrabi, carrot and apple using a mandoline or a sharp knife.
2. In a separate bowl, combine the lime and orange juices with the oils, salt and pepper.
3. Pour this dressing over the vegetables, mix thoroughly and let sit for 30 minutes at room temperature.
4. When ready to serve, sprinkle with chopped walnuts, and sliced avocado.
